Yorkshire Puddings

Welcome to a year of baking with SimpleMan.  We start off with Christmas Day 2020. We are making Popovers or Yorkshire puddings, if you are British. The recipe is of course Simple. These baked airy breads are between a cruller style donut and croissant. The recipe and pictures are included below.

Ingredients

1 ½ Cup Milk

1 ½ Cup all-purpose flour

4 large eggs

1 ½ teaspoon kosher salt

3 Tablespoons rendered beef fat (from a roast) or vegetable oil

Steps

Preheat oven to 425 F.

Put a 12-cup muffin pan in the oven to heat.

In a medium bowl combine milk. Eggs, 1 Tablespoon of beef fat and salt.

With a handheld electric mixer beat ingredients until smooth. Let stand 15 minutes (thank you Nigella Lawson).

Meanwhile, remove the muffin pan from the oven and add ½ teaspoon of beef fat to each cup.

Return the muffin pan to the oven to heat until the fat is very hot, about 5 minutes.

As the fat heats up, add the flour to the egg batter and mix until smooth.

Carefully and quickly pour the popover batter in the muffin cups (1/2 to 2/3 full). Pace in oven and bake for 20 minutes. DO NOT OVEN THE OVEN DOOR.

Reduce heat to 350 F and bake for about 20 minutes, until the popovers are golden brown and puffed. Serve right away.
