Blueberry Streusel Muffins

Ok, so it has been 2 weeks since I ventured into the Trashed Kitchen (AKA the realm of my queen, Mrs. Simple Man). There are two reasons for the gap in time: 1) we had too many Christmas goodies to eat, and 2) I prefer not to become any bigger than I already am. I did make good use of the of my time though. I have been flagging recipes in 3 different cookbooks and have 20 recipes in mind to share with you. Today I am pulling a recipe by Mrs. Lillian Beiler that was published in the “Favorite Country Recipes—Perry County Amish Community” Cookbook Blain, Pennsylvania. We are making blueberry streusel muffins. Two questions– what is Streusel? and where is Blain, PA? Streusel is a German origin word that means yummy goodness! It is a topping for baked goods make with Fat (Butter), flour, sugar and spice.  …and here is Blain.

Here is the recipe and a picture. As I am creating this post the muffins are out of the oven and smell amazing!

Ingredients Muffins

1/3 Cup granulated Sugar                          ‘1/2 teaspoon salt

1/4-Cup butter, melted                1 Cup Milk

1 egg beaten                                  1 teaspoon vanilla extract (I use pure)

2-1/3 C All Purpose Flour             1-1/2-Cup fresh or frozen blueberries

4 teaspoons baking powder

Streusel topping

‘1/2 Cup granulated Sugar           ‘1/2 teaspoon ground cinnamon

1/3 Cup all purpose flour             3 Tablespoons butter melted

Process

In a large bowl cream sugar and butter. Add egg; mix well. In a medium bowl combine flour, baking powder and salt. Add dry ingredients to the creamed mixture alternating with milk (batter was a little stiffer than cake batter). Stir in vanilla. Fold in blueberries.

Preheat oven to 375 F.

Line or grease a 12 regular muffin tin.

Fill the cups ‘2/3 full

In a small bowl mix Streusel ingredients sugar, flour and cinnamon; add melted butter.

Sprinkle streusel over muffins.

Bake at 375F for 25 to 30 minutes – I inset a butter knife at 25 minutes if it comes out clean, we are done if not we go another 5 minutes.
